Colour: Deep purple with a shiny red plum rim.

Bouquet:The sweet darkness of cherry, blueberry and red plum fills the centre of a freshly baked galette, warm from the oven. Baking and kitchen aromas mix with earthy, woody spice, black tea leaf, dried herb and orange blossom.

Palate: A pleasingly deep mix of fruits mingles easily with umami flavours. Savoury Jamon and prosciutto are chased by dark fruit and mixed spice, while a luscious strawberry panacotta adds silky decadence to the mid-palate. Fruit and spice curl and wind the length of the palate, as long, fine tannins draw long into a satisfying, dry finish. Food Match: Pork belly confit with fennel, orange, radicchio and horseradish salad.
