Cynar is an Artichoke aperitif was first created in Venice in 1952. Herbs, spices, botanicals and of course - Artichoke are soaked in very high proof spirit before being blended to bottling strength with a sweet syrup. Cola and coffee on the nose, a bit barnyardy too. The palate has a silky texture with heaps of herby flavours, a bit earthy like a good Pinot, there's a sweetness there too. The finish is long, dry, elegant and gently bitter - definitely bitter, but not as assertively bitter a something like Campari. I really enjoy a healthy slug and a single ice cube in a tumbler, like Aperol and Campari it's great on ice with a slice of citrus, or it works really well in place of Vermouth in a Negroni or a Manhattan. I think this stuff is slept on.
