Taylor & Smith is a small distillery in Hobart, Tasmania who have gone to a huge effort to produce this Gin. The base is produced using apples from the Huon Valley and 17 botanicals, many of which are local. While Juniper is the predominant flavour it's backed by a healthy dose of Tasmanian Pepperberry, locally harvested Kelp & Kuneza. The base spirit is rich and generous on the palate, the juniper prominent but doesn't overpower all of the microdetail. It's a little out there, but completely compelling Gin that makes a wonderful Martini.
