We saw a few producers releasing Piquette made from their 2021 crush, and expect to see more this year and beyond as this trend catches on. It's made by rehydrating, then refermenting grapey mass after the wine has been crushed. Typically they're lower in alcohol than wine (3-7% alc/vol), fruity, aromatic, tart, and funky. This one made by Unico Zelo is at 3.5% alc/vol, flavour wise it's right at the end of the tart and funky spectrum and is conveniently one standard drink per in.
