Philly sour refers to a fancy new yeast that sours as it ferments. I think it's produced by Lallemand. I don't know if it's the powers of suggestion, but each beer that uses this picks up a creamy texture and a tartness that reminds me of Mum's cheesecake. That's exactly what's going on here; super tart citrus bursts, savoury with a creamy-ish texture and a little touch of spice and bitterness. Fascinating drink.
