I've been arguing for a while that the best oak casks in Australia are manufactured for and used by Gospel Distillery in Brunswick. There's just as good a case for Heaven Hill's casks being the best in the U.S. too, and that's the timber Ben has employed here for this 2022 Stout. By law, Bourbon can't be called Bourbon unless it's been aged in a charred, new American oak cask, so there is a steady supply of casks that are fresh, vibrant and still soaked in Bourbon. These fresh casks are called first fill, and if you love vanilla, coconut and spice flavours - they'll be right up your alley. Anyhow, back to the beer - Ben's Impy Stout recipe is huge; it is has a big oily texture, it's equal parts sweet, tough, bitter, astringent and hedonistic. Combine that with a soak in the aforementioned Bourbon oak and, well, there you are. It's a doozy. Again.
