Four Pillars Rare Dry is the gin that really kicked the door open for Aussie distilling. It’s citrusy, spicy, and flavoursome, built on a classic London Dry framework but with native twists like lemon myrtle and Tasmanian pepperberry. Juniper still leads the charge, but there’s a big hit of orange peel, some gentle warmth from the spices, and a soft, almost creamy texture. It’s beautifully balanced, built for tonic, but holds its own in pretty much any classic gin drink.
There was always something that gave me the heebie jeebies about Four Pillars. Not the booze - it's magnificent - just the company. It felt like big business masquerading as small guys, which turned out to be spot on, first when they built that massive (awesome) cellar door operation in Healesville - none of the genuine crafties can afford to do that, but futher confirmed when they cashed out and sold to Japan's Lion Nathan in 2023. It's great juice - but I do die on some peculiar hills, and this is an example of it.
