Not quite a Pet Nat, but not quite traditional - we have put it in the Pet Nat category because it'll probably tick more boxes of Pet Nat lovers than traditional sparkling wine lovers. Made from fruit grown on the Tibooburra vineyard near Yellingbo in the southern Yarra Valley GI. Primary ferment was with wild yeast and took place in old French oak barrels, secondary ferment in bottle before being released without being disgorged.
It pours a murky pale straw colour and is quite effervescent. It's really aromatic; tropical fruit, grapefruit, mango and peach vibes with a whiff of funk. The palate continues the tropical fruit theme, more grapefruit, mango and gooseberry vibes - again with a wee touch of funk, before a long bone dry, tangy crisp finish. It's weird, but boy howdy is it refreshing. 11.5%
