Made mainly with Vermentino and a splash of Sangiovese - both from Heathcote, Micah's 2024 Fizzy one looks great; an inviting blush colour with aromas of citrus, chamomile & fennel. The palate is lovely, it's firm & grippy with green apple, dry biscuit, almond flavours above a mineral backbone, finishes dry, powdery, and quite savoury with the signature DEFIALY funk there too.
